Lemon Garlic Green Beans
2 cups of fresh Green Beans
2 medium cloves of garlic
2 scallions
1/2 pint of grape or cherry tomatoes
the juice of 1 lemon
salt and pepper to taste

First boil your green beans to the desired tenderness you like.
In a skillet saute garlic, scallions and grape tomatoes for a couple of minutes
Combine the boiled and drained green beans to the skillet.  Cook for a few minutes.  Add salt and pepper and the lemon juice.  Take off heat and serve!


Amy's Fresh Garden Salsa
4 medium Roma Tomatoes
2 medium cloves of garlic
2 scallions (use both white and green parts)
1/4 cup of chopped cilantro
1 jalapeno pepper diced
1 serrano pepper diced
the juice of 1 lime
Pinch of salt and pepper to taste

Dice tomatoes, garlic cloves, scallions and cilantro and combine in a bowl.  Carefully chop the peppers and add them to the mixture.  Squeeze the juice of 1 lime onto the veggies.  Salt and Pepper to taste!  This is similar to what I make for myself. I like things extra hot so I usually add 2 jalapenos and 2 serranos...and I also add more garlic.  I toned it down for you all!   Total calories per 1 cup serving is approximately 42!  Eat up!



Kale Chips
Preheat oven to 350 degrees
1 large bowl of kale leaves, stems removed
1 Tablespoon of extra virgin olive oil
pinch of salt and pepper

Drizzle the olive oil over the bowl of raw kale leaves.  Use your hands or tongs to coat the kale in the olive oil.  Sprinkle with a pinch of salt and pepper and use hands again to coat the leaves.  Spread the kale on a baking sheet and bake at 350 for 12-15 minutes or until crispy.  Enjoy!  Only 58 calories per 1 cup serving!


Roasted Asparagus
Preheat your oven to 400 degrees.
Rinse asparagus spears.  Snap off the ends.  (they will break naturally where they need too!)
Use 1-2 Tablespoons of extra virgin olive oil to coat the spears.  Use your hands to mix them around on the baking sheet.
Sprinkle salt and pepper to taste!
Roast in the oven for 25 minutes or until the asparagus is tender.  You can check this by piercing with a fork.   This recipe has only 58 calories per 1 cup serving!
